I couldn't agree more that the trick is to make a meal nutritious but also simple.  Kids don't tend to like casseroles or dishes with things hidden in them that they can't see or don't know what they're eating. To your point, they also often like fresh veggies and fruit and that makes up for a lot of nutrition. 😋 😋
